Commercial Kitchen Plumbing

A kitchen line that closes on a Friday evening is not a plumbing problem. It is a revenue problem.

Quick answer

Commercial kitchen plumbing covers grease interceptors, floor sinks and drains, indirect waste connections, and high-use fixtures. Health department requirements govern much of it, including air gaps and indirect waste on food equipment. We handle the plumbing and coordinate around your service hours.

This is the food service side: grease interceptors and the lines feeding them, floor sinks and floor drains, indirect waste connections for ice machines and prep equipment, three-compartment sinks, and the high-use fixtures that take far more cycles than residential ones.

A significant amount of what governs this work comes from health department requirements rather than plumbing code alone — air gaps, indirect waste on food equipment, and backflow protection all fall in that area. We build to those requirements, and your health inspector is the authority on what applies to your facility.

Scheduling is usually the constraint rather than the work. Most of what we do here happens overnight or before opening, because taking a kitchen out of service during a shift costs more than the repair. Off-hours scheduling carries a premium that we quote in advance.

  • Slow floor sinks or standing water on the line
  • Grease odour near the interceptor
  • A health inspection comment about plumbing
  • Opening or remodelling a food service space
  • Ice machine or prep equipment waste connection problems

What drives the number

We quote after diagnosis, not before. These move the number most on this service:

  • SCOPEA single fixture versus a line or a build-out.
  • HOURSOvernight or pre-opening work to avoid closing the kitchen.
  • ACCESSWhether there is usable cleanout access to the affected line.
  • CONDITIONLines that have been deferred take longer to bring back.
  • EQUIPMENTIndirect waste and air gap requirements on specific equipment.

Salinas note

Salinas has a substantial food processing and restaurant sector, and grease line maintenance intervals here are driven by volume rather than a calendar. If your kitchen line closes more than once a year, that is usually a sign the interval is wrong or the line has a structural issue — worth investigating rather than continuing to clear it.

FAQ

Questions about this service

Can you work outside our service hours?

Yes, and for a kitchen it is usually the only sensible option. Overnight and pre-opening work carries a scheduling premium that we quote before booking rather than adding afterwards.

Do you pump the grease interceptor?

No. Pumping and transporting grease waste requires a licensed liquid waste hauler, which is a different licence from plumbing. We service the plumbing connected to it and can coordinate with your hauler.

Why does our kitchen line keep backing up?

Because clearing a blockage and removing its cause are different things. A cable opens a channel through grease; the layer on the pipe wall stays. If a line closes on a schedule, the interval is wrong, the interceptor is undersized or overdue, or the line has a structural problem. A camera answers which.

Will this satisfy our health inspection?

We build to the requirements as we understand them, including air gaps and indirect waste where they apply. But compliance is the health department's determination, not ours, and we will not tell you a repair guarantees a pass. Confirm specifics with your inspector.
